Christie Leighton, RD, LD has been practicing clinical nutrition and counseling in health care and food service for over 12 years. She has enjoyed a career in health coaching, menu development and nutrient analysis and is looking forward to the future of nutrition in food service. She is currently assisting with the development of nutrition education curriculum for culinary training programs. Her passion has always been in promoting nutrition and putting health on the menu. MenuRD assist the food service industry in following nutrition guidelines and nutrient analysis as well as promoting healthy options in menu planning.

Darcie Ellyne, MS, RD, CDE

Founder of Restaurant Dietitian, Darcie Ellyne has provided nutrition consulting and menu labeling services to the restaurant industry for over two decades. As a Registered Dietitian and Culinary Nutrition Consultant, Darcie uses state-of-the-art database technology to generate accurate computer nutrition analysis.

With a Master's degree in Nutrition Science from San Jose State University, Darcie enhanced her nutrition expertise with culinary training at the world renown Ecole de Gastronomie Francaise Ritz-Escoffier in Paris. She has experience in food service management, teaching and nutrition counseling. With her unique educational background and professional expertise in both food service and nutrition, Darcie is sensitive to and knowledgeable of the aesthetic, technical, and nutritional aspects of food production and consumption.

Linda R. Yoakam, MS, RD, LD

For almost 20 years, I have been working with individual recipe developers, publishers of cookbooks, restaurateurs, PR firms, caterers, and others in the food industry to analyze their recipes or products to produce label-ready copy or specific nutrient information for publication.

Melissa B. Pinard, RD, LD

Melissa has been a registered Dietitian for 18 years with experience in acute care, long term care, nutrition analysis and food labeling. Melissa's clients have always praised her thoroughnes and efficiency. Melissa is licensed in both New hampshire and Massachusetts. Business can be conducted via email, fax, mail or phone.

Palate Works

Palate Works has been providing nutrition analysis and food label consulting for over 15 years. Owner Carol Harvey is an authority on nutrition labeling in addition to her 15 years of professional cooking experience. She has written dozens of food and nutrition articles for magazines such as Women's Sports & Fitness and Restaurants & Institutions, and authored two San Francisco area restaurant guides in the '90s focusing on dining out healthfully. She was a nutrition editor and recipe "makeover" contributor for Cyberdiet.com before its sale to DietWatch.com, and was interviewed twice on ABC's Dr. Dean Edell's Medical Journal regarding retail and restaurant nutrition issues. At Palate Works she advises restaurants and manufacturers on nutrition analysis, labeling compliance and product development. Ms. Harvey has a B.S. in Biology/Nutrition from Rutgers University.
